BPI’s Finished Product Test and Hold Challenge

Beef Products, Inc., recent recipients of the International Association of Food Protection’s 2007 Black Pearl Award, re-issues its “Test and Hold Challenge” to its current and prospective customers. BPI is committed to advancing food safety through rigorous finished product sampling and testing. To make it easier for BPI customers, the BPI challenge provides that:

  • BPI Boneless Lean Beef must be used at a minimum incorporation rate of 15%;
  • All other raw materials must meet agreed upon specifications for quality and be purchased from approved sources;
  • Facility audits will be performed by BPI or meet standards established by BPI;
  • Grinding and blending methods must meet agreed upon expectations;
  • A rigorous sampling and testing program will be developed and tested products held until negative result for E.coli O157:H7 achieved.

The reward for those taking the challenge is BPI’s commitment to purchase back production that tests positive for E.coli O157:H7.
